Camping - Meal Planning

Any campers here that have advice on meal planning when camping, or favorite camp recipes? My family is set up now for car camping, we have a two-burner camp stove and a couple of Rome pie irons, we've got some cookware and cast iron, but I'm a little stuck on planning somewhat nutritious meals. I tried googling and saw lots of delicious suggestions for things with bacon, which is fine for some meals but not in every dish. I started thinking about our next trip and have:

supper: walking tacos (ground beef, fritos, taco seasoning, grated cheese, I'll use baby spinach here, salsa), hot chocolate

breakfast: scrambled eggs, salsa, leftover grated cheese and spinach, tortillas, nescafe

Looking for ideas on how people plan when you can only fit a limited amount of items in your car but you want some variety and at least an attempt at balanced nutrition. We've got kids, and we can do snacks pretty easily like apples and cheese sticks and they will be totally happy. It's more meals for the whole weekend where I'm stuck.
