I'm so excited that we are going camping again--it's been a decade since this Thanksgiving weekend trip. We will take the train from our home in Berlin, then a ferry, and then bike the last 10 miles with our tent, sleeping bags, all the clothes and most of the food for 3 days. There will be a grocery store we can bike to, and I hope to find a "u-pick" fruit source.
I'm looking for ideas of what to cook with pie irons (those metal clamshells on long sticks famous for making "pies" from 2 slices of bread and canned cherries) to cook *over* the fire, two mini cocottes to bury *in* coals, and aluminum foil for everything. There is an overwhelming number of websites with far too many recipes devoted to cooking with each of these implements; can you help me find the winners? What recipes have worked for you?
The real "fun" starts with our dietary limits--no beef or pork, limited dairy, and most fish is out. Salmon, chicken, and tofu are our goto protein sources--but they aren't known for long shelf lives. A good veggie stew we could make individual helpings of or other meat-free meal would be great (tbh, it'd be meat-free for me, with a chunk of hearty bread & some cheese; he's likely to open a jar of hot dogs & cook them on a stick over the fire as a first course while the stew stews.)
I can post my tentative menu if people want, but am holding off at first because I know there are many creative cooks here.
