I like Cameos for their excellent crispness, moderate to high acidity (though always much less than a Granny Smith) and balance of sweetness. What pushes them over a good Fuji, for me, is the slight floral notes in their aroma. I must have eaten at least 25 lbs of these things last year.
For me to really enjoy apples, they have to be very crisp (any mealiness or mushiness puts me off), and have that sweet-tart balance. Fuji is my default supermarket apple when I can't find Cameos. I tried Honeycrisps last month- excellent, but I'm not sure I like them more than Cameos, and they're much more expensive.
Do you have any other suggestions for me?
