Calling Melanie -- Why Riesling with Thai and other Spicy Food

Looks like we lured Melanie here with doughnut talk.

I mentioned in my trip report that the wine flowed at Lotus of Siam when Melanie hit town.

I'd love it if you would be willing to talk about why German Rieslings go so well with Thai, or any observations you had about the Lotus list/food, and what characteristics of Rieslings make them amenable to such different kinds of food.
