Years ago I learned this term from an African-American woman who identified this cut and provided a basic recipe for preparing and cooking it. After thirty years or more, I no longer recall exactly which cut is a "callie ham" (if that is the correct spelling). The recipe I remember vaguely as calling for a vinegar-based, spicey barbecue sauce. A Google search leads me nowhere in trying to find the derivation of the term, let alone other information. I wonder if anyone can identify the cut, provide a recipe, or explain the term's origins.
