As excitement for this season's Dungeness crab stirs west coast hounds, I don't believe we've had a thread to gather recipes. If so, I didn't see it and would appreciate any pointers. For those who've never had the pleasure of this crab before, refer to photo below...
While I have no problem simply eating them steamed and dipped in lemon juice, S&P, I want to branch out this season. My mom showed me how to make our Viet version of crab stir-fried w/ mung bean threads (mien xao cua), which I promise to post w/ photos later.
Here's what I have on my list so far to make:
1. SF Tadich's cioppino (from the book)
2. SF Tadich's crab cakes "
3. Salad of crab, avocado, tender greens, and maybe orange or grapefruit (my own made up version)
4. Crab souffle (w/ crab butter added!)...I'll adapt a Julia Child recipe
5. Crab and corn chowder (will adapt a recipe)
What's missing? Asian preps!! I want to learn how to make Chinese versions, as well as others. Also can't stop thinking about a dish that I've only heard about: Viet-American crab w/ garlic noodles (popularized by Crustacean restaurant). No idea how to make it when I've never tasted it before, but love the idea...any recipes out there? Nooodles, did you try recreating this?
BTW, how many ounces of crab meat will I roughly get out of one 2.5 lb. crab? Thanks for your input!
