Had lunch today at CSA with my friend. We ordered almost 10 orders each of Maguro, Sake, Kampachi, Snapper, Salmon Roe, Wild Sockeye Salmon, Salmon Skin Roll, and 2 others that were equally excellent. The owner used to own Hama and he is a master at getting the best fish. The only difference is that it is sold at $2.00 an order. I was able to give my friend a complete education of the nuances of sushi, eat until we were ready to burst, and get a bill for $35.00 before generous tip for both of us. I am a sushi snob, thanks to this board and I am telling you that this is really top quality fish. Technique may not be perfect on each roll but it is quite good. We discussed the taste and texture benefits of toasting the nori sheet before making the rolls. Our chef overheard and made sure to take extra pains in assuring us the best possible orders that he could produce. He was an interesting guy. He is Chinese but raised in Holland. This is my second foray but it will not be long before I am back again. When you go, be sure to inquire about the special secret Omakase dinners that they do. They can only serve about 6 at a time so space is limited and you need to ask to be let in on the secret. The menu is different every time and you have no idea what you are going to be served until it arrives in front of you. The more you pay, the more adventurous the food will be.
