Calderada (Ecuadorion Style)

I was wondering if anyone has a recipe for this Ecuadorian-style Calderada. It was a seafood stew recently featured in No Reservations Ecuador and I ate something similar once cooked by my friend's grandmother. I didn't find much on Google except for the Spanish-style Caldeirada.

The stew was mostly seafood, featuring squid, conch, mussels, crab, octopus, shrimp and potatoes.

The broth is what made this stand out. The stock consisted of a reduction of beer and old bread, added to the octopus stewing liquid. It was flavored with saffron and some soy sauce. Hoping someone can help with this. Thanks!
