This year I'm going to dedicate some time to making cakes. The first two off the top of my head that I really want t get down are carrot cake, and tres leches.
What type of cake tins or pans should I add to my arsenal? Any other simple tools that will make life easier? Are there any websites that explain the basics really well and that have recipes that go by weight instead of volume?
Also of note, I can't have gluten. So that kind of limits me as far as cake textures go, but if anyone could point me in the right direction of making different types of icing/glazes that would be great too.
