I tried to pick up some andoille sausages today and realized that what constitutes an andouille at my usual meat counter, isn't what I was used to getting in the States. I'm looking for the cajun type of smoked andouille made from pork butt with traditional cajun spices. What I keep finding here is the french version made from stomach or tripe. I've tried IGA, William J Walter, Supermarche PA and both butchers at Marche 400. Has anyone seen this anywhere?
