Buying meat in advance and staging it

Hi. I'm wondering how far in advance one can/should buy fresh meat; in my case, a leg of lamb. I want to keep it seasoned in the fridge for a day or two, but that puts purchasing on Xmas day. Is it ok to buy fresh meat 3 or 4 days in advance?
Also, lets say I have to pick someone up at the airport and no one will be home to watch the oven. Can I roast the lamb half way or so. Pull it out and leave it on the counter, and then throw it back in to finish when I get home?
