buying my first chef's knife – help!

Hi,
I am trying to decide on a knife for an Xmas present for my brother, who is a serious ‘amateur’ chef (if there is such a thing!). I thought it would be a nice present b/c his current knife is a cheap old thing with a plastic handle that he bought during his university years.

I know that i’m looking for a chef’s knife, and I have been at Williams&Sonoma the past two days staring blankly at knives. I am about to buy a Global 7” Santoku blade (with hollows)... My question is, is this a good all-purpose knife? I noticed that most chef’s knives are at least 8”. Also, I don't think any of the other chef's knives I've seen have hollows. In the past, my brother has always stated an intention to buy a knife with a hollowed blade, so maybe this is the one I should get. Does anyone have any opinion on this?
