Does anyone know where to find uncooked, genuine Texas style (German influenced) sausage or "guts" in Los Angeles?
If anyone's been to Central Texas to eat 'Q, you know what I'm after. I don't know if they are pork or beef or a combination of both, but they are mainstay of Texas BBQ, right after brisket.
I'm looking for fresh made from a butcher. Short of that, maybe a good Texas style BBQ restaurant from which I can get a lead. I want to smoke them at home.
