I'm currently doing a lot of Mexican cooking so good lard is something I need. My preference would be for some that comes from animals that were raised organically, or at least not pumped full of unnecessary antibiotics, growth hormones, etc. A lot to ask for I know.
The Niman Ranch online store offers both pork caul fat and back fat. Would either of those be suitable for making my own lard? Their production methods seem to fit in with my criteria above.
