hi, folks - it's good to be back.
I want to make a recipe that calls for dried chorizo, but all I can find is the squishy raw chorizo packaged in plastic tubes (nothing against that product, it just won't work for the recipe is all). I've checked all the "latinesque" grocery stores within walking distance of my west lincoln square/east albany park neighborhood (no small number of grocers, I assure you) with no luck.
Any hints? Failing that, is there another dried pork sausage that might substitute well? Something eastern european with paprika, maybe? (there's no dearth of eastern european sausages in this neighborhood, either)
