Butternut Squash for Thanksgiving side dish

wineaux | Nov 23, 201510:20 AM     11

Only 3 of us for Thanksgiving this year, so I can have a little more fun straying from some of the traditional items. Am doing a grilled turkey with both a basic & a sausage/apple stuffing, garlic mashed potatoes, roasted brussel sprouts and/or broccoli/cauliflower. Would like to do something with roasted butternut squash (not soup or hummus as we've been doing a lot of that lately). The only thing that's come to mind is a butternut squash lasagna, but not sure if that would be too heavy. Any other ideas or a good butternut squash recipe?

Much thanks!
