I know it's not pumpkin, but since so many have been on the lookout for great seasonal pumpkin dishes, I thought butternut squash might have a similar appeal.
This risotto is on the specials list, so you might want to call ahead if you're going specifically for it. Since every server in the restaurant told us it was their favorite dish, I imagine it'll be around at least for a little while.
Served in a half butternut squash skin/shell, it's rich and yummy. The rice still has firmness, while the overall effect is creamy and indulgent. Perfect for a chilly fall evening, I think it cost around $15. It was so rich that we couldn't finish it, and I subsequently barely touched my entree. My BF said the leftover risotto was even better the next day. That surprised me, but I do know that he reheated it in the oven, so maybe that's why the texture held up.
