Here’s the recipe as the chef wrote it for me.
500 grams bread flour
15 grams dry yeast
10 grams salt
45 grams sugar
20 grams milk powder
150 grams butter
100 grams egg (2pcs.)
200 milliliters water
12 grams cinnamon powder
250 grams butter (to spread on bread)
50 grams icing sugar
·Combine all ingredients except butter and icing sugar at low speed for 5 minutes
·Adjust to medium speed for 8 minutes, take dough out from mixer, and transfer into bowl, cover with cloth, rest for 30 mins.
·Divide dough into 35 gram loafs, press flat by hand, top with some butter and shape to loaf
·Arrange the loafs on cake pan, and proof 40-50 minutes
·Bake at 210 C. for 25-30 mins.
·Take out of baking tray, brush with butter and roll in icing sugar.
I have to admit I never tried making them, although a friend who also had them keeps urging me to. If you do decide to give it a try, I'll be most eager to hear what you think.
