Preparing for the fall, I thought I'd make up a batch of stock for the freezer. Well! Try buying bones. Esposito - none; Ochs and Martin in Reading Terminal - two bones. Their story, bones "come in" Wednesday and Thursday. Then I struck gold at Whole Foods and bought some for the freezer as well as the current stock.
Then there's the matter of shin beef. Not available in the summer. So what do they do with it when they don't have it for sale? Or are beef now engineered to not have shins in summer?
