Sorry, no matter how I tried to think of a non-subliminal title, nothing came to mind.
So, here's the deal; I've started to cure my own meats (http://tinmansthoughts.wordpress.com/...), and I've found that, even doing the freeze-slightly-and-slice method, I still can't slice my bacon thin enough. That I can live with, but I'm going to make pancetta, and would like to have the option of thin slices.
So, does anyone know of a butcher--Chez Vito, perhaps?--who, for a small fee, will slice my meats?
