Where do people go for meat? I am looking for a good butcher-- some one who will trim a lamb shank and grind meat to order and procure fresh sweetbreads on request. I used to go to Marconda Meats at the Farmer's Market, pre-Grove, but it's such a zoo over there now, plus I'm not in the neighborhood so often any more. I have also had some luck with Vicente Foods, but would especially appreciate hearing of downtown or other more easterly options. I am skeptical of the quality and cleanliness of the butchers and fishmongers at the Grand Central Market; that may be an irrational prejudice but one that was reinforced by seeing cooked and raw chickens touching one another on the grill at Roast to Go the other week. I am, however, willing to be disabused.
