I'm in Melbourne, but willing to travel quite a ways for good beef.
On the west coast, I used to buy whole custom-raised steers and have a local butcher dry-age them for me, but the supply I moved with has run out, and all of the local cattle I've seen is lean, stringy, and full of worms. It takes cold weather to put some fat on them!
I've only found one custom butcher in Melbourne (Kempfer's), but their quality is only so-so and they have a very cramped meat locker, so they can't hang beef for many weeks the way I like it.
I recognize that it's hard to maintain the right humidity to do proper dry-aging in this tropical climate, but maybe someone can point me to a butcher who doesn't just hand out prepackaged cryovac?
