I'm contemplating cooking with fresh truffles for the first time. I want to shave them over risotto for Christmas Eve dinner. I have found a place in Miami (Marky's) that sell Italian fresh Burgundy truffles for what appears to be a reasonable price (~$36 an oz). Anyone have any experience with this truffle variety that would help me out? Is this a good time in the season to buy them?
Any help would be much appreciated.
