A posting asking about vegan cheese made me remember a longtime question... why do vegetarians of all stripes seem to try so hard to re-create meat-based foods? Vegan cheese? Veggie burgers? Soy hot dogs?
Is it just that they miss the familiar meat -based foods?
I'm definitely not judging here,so don't flame me ;-), but it seems that the best part of vegetables, fruits and grains to me is that they don't bear any resemblance to meat. Why go through the trouble (and the industrial processing) to get something that is a mediocre-approximation?
