I had passed on a tip earlier that a good version of bun rieu could be had at the crepe stand at Grand Century Mall in San Jose. Made it in again and while it did not quite live up to my own hype, I still think it is a good version. The broth has a nice complexity that really goes up a level with the provided shrimp paste and roasted chile oil. The fried cubes of tofu were tasty and the crab meatball had very good flavor but seemed firmer and more meaty than crabby. A big plus for me was the large portion of greens in the soup which balanced out the dish for me. Round rice noodles were fine but not the star.
