Building a rack to roast a whole cow in Columbia

If anyone has ideas please post pictures. I am redoing mine as it is falling apart and I want to improve it. I am using 1.75 inch 3/16 thick. So far I have an 8foot main center support. I am also interested in any thermo coupler device that I can insert into the cow so that I can keep up with internal temps. I would like to have a good handle on this bt mid may.
