Buddha's hand: marmalade or candied peel?

I'm starting to see some Buddha's hand citrons in my supermarket. Since this fruit is just all zest and pith, would it be better suited for marmalade or candied peel?

Just wanted to get people's opinions, because I'm worried that in a marmalade, there may be too much pith. Would it be too bitter? And a single Buddha's hand is pretty big. Would you really leave all that pith in the marmalade? Then again, I don't want to waste any of the Buddha's hand.
