Buddha's hand?

My roomamte and I got a couple of buddha's hand citrons (fingered citron) at the food bank and are wondering what to do with them.

The lady there said put a chunk in soup or stew. (when I said, "oh, like thai soup" she said "no, any soup!" bah!) which is good, but I think I might be able to use it to make marmalade or candied citron.

Any ideas?
