A little over 25 years ago I moved to Orange County, and in the early '90s I was at The Taste of Orange County on the grounds of what is now the Irvine Spectrum. Leaving at night i caught the irresistable sight and smell of meat cooking on a giant grill. That night i sampled and took home tri-tip cooked over red oak and my taste buds were transformed forever. The owner had a catering business and went through restaurants in Cypress, Santa Fe Srpings, Norwalk, Upland, and then Covina, and although I didn't make it to Upland much or Covina until this week, I still had memories of it being simply the best tri-tip I had ever had....and I have gone through a LOT of tri-tip in my time! The owner even told me about the Central Coast and places to try, and through the years I have hit all of them, but his stood above the rest for me.
I finally made it out to their small restaurant in Covina this week, and the sandwich was so good i had to get some to go for my family. Sadly, I learned that the owner Steve McFarland had passed away about a year ago. Steve was a big guy who took pride in his food and wanted to share it with others. The food and spirit carries on. If you are in the San Gabriel Valley in or near Covina, or you need some pretty awesome catering, I very much reccommend Buckboard BBQ and Catering.
