WHY are there bubbles in champagne, beer etc.?

Hello, i never really understood why there are bubbles in champagne, i know how they make them, but im wondering why do they choose to do so? Does the bubbles add anything to flavour, releasing aromas or something?

Most sommelier prefer to drink champagne from white wine glasses, and not flute, so they are not prioritazing the bubbles.

I guess the reason is the same in beer for instance?
