Apparently Saigon Express Deli, 2538 Nicollet Ave. #5, has been open about a year and might be part of a chain. I had grilled chicken, baguette/Vietnamese sandwich with jalapeno, cucumber, pickled radish, carrot, etc--very good. It's on the order of subway where you tell them what you want on it so I asked the lady to make it how she'd like it. They also had several flavors of bubble tea so this time I tried the Thai tea version which was good but...$3.50. She also gave us several samples of other flavored teas and all were very good.
The chicken sand was $2.95 but they grilled the chicken for me (and I would say it was at least 25 times better than Subway). The other ones I've had (in Atlanta) had the chicken already sitting there looking like flaked canned tuna. This place is more expensive than Saigon on University for Vietnamese sandwiches but I think Saigon only makes pork.
The lady said she had been sent to LA to learn how to make the teas and about the latest trends in food. That's how I got the impression this might be a chain.
