So, beginning with the premise that Brussels are not my all time fav, (not bad, mind you, but . . .) anyway, I picked up a recipe that my Midwestern husband loves (and he's the pickiest pain in the butt I've ever known, and he thinks these are fabulous!!) I can't take credit for them, as they're a Chef John recipe, but I messed with them to suit. So, here goes. Oh, this recipe is based on 4 servings.

24 Brussels Sprouts (trim, wash, etc.)
2 Tbsps. Butter
2 Tbsps. Olive Oil
4 Tbsps. FRESH Lemon Juice

Slice thinly (or break out the food processor and run them thru the slicer blade)
Melt butter in olive oil until sizzling
Toss sprouts into butter/olive oil and mix well.
Heat through for about 2 minutes, mixing as it cooks;
Add lemon juice and mix again.
Serve.

Options: Fry 2 or so strips of bacon until crisp. Save the fat. Instead of butter/olive oil, throw the sliced sprouts into the bacon fat; Stir and mix until sprouts soften a bit, add lemon juice, mix, add crumbled bacon, mix and serve.
