Where can I get a simple, good omelette: soft interior, lightly brown outside, with a little something in the middle?

Yesterday, at a certain UWS restaurant, I ordered an omelette and was served an enormous, perfectly ellipsoid (possibly steamed) and uniformly colored mass of cooked egg filled with a good pound of congealed oily gruyere cheese. ugh! It's still in my stomach.
