Brunch menu help?

Having a brunch this weekend - have a couple of questions and open to menu assistance....here goes

Drinks - Bloody Caesars and Mimosas
Asparagus Frittata - my 12 inch pan is NOT non-stick so hoping that spraying with oil and butter will make this easy to lift??
Maple Glazed Back Bacon roast - Canadian bacon - must have since we're Canadian!
Salad - Butter lettuce, candied pecans, with gorgonzola ....would like a sweeter type vinaigrette I think???
Potatoes....debating....roasted small reds? or a potato pancake if that's not too much "last minute" work or what???
Sliced Tomatoes - red and yellow with basil and balsamic
Smoked salmon and Cream cheese
Breads - Rye and Pumperknickel

Fruit Platter
Orange Olive Oil Cake
