Can I let brulee pie set overnight before adding the sugar topping?

I am making a brûlée pie for Thanksgiving tomorrow. I was thinking I could make the pie tonight, let it set in the fridge, add the sugar and torch it right before serving it tomorrow.

Do you think that's possible? I definitely don't want to let the sugar set in the fridge overnight but do you think I can let the pie set over night prior to adding sugar/torching?
