I'm making a soy sauce braised chicken recipe for 20 people. The recipe requires that you brown the chicken in a pan first - 6 minutes per side over medium-high heat. However, it will take quite a bit of time and effort to brown about 30 chicken thighs and drumsticks. Can I brown them in the oven instead? I would put them all in a roasting pan and flip them over half way. What temperature would I use? Thanks for your advice!
