Made a salad of blanched broccoli crowns, cubed orange segments, and walnuts dressed with a little olive oil and some lemon and orange zest. When I made the salad (Sunday night) the broccoli crowns were bright green. Over the last couple of days the broccoli has morphed into a pale greenish color speckled with yellow.
Anyone know why this happened? Had the broccoli lost it's nutritional value? It still tastes fresh, but I'm wondering if it's gone bad.
