I frequently buy packer briskets (whole, shrinkwrapped from the meatpacker, for the uninitiated. Includes the very fatty second cut, not just the flat that bubbe braises) from my local (nonkosher) butcher for barbecueing.
I was thinking about doing barbecue for some kosher-keeping folk. Equipment issues aside, would a kosher butcher have packer briskets or is one of the requirements for it being kosher that the butcher must dissect it and remove offending nerve tissue, blood vessels, etcetera?
