I've got the family coming over for lunch on the weekend and have ordered some Holmbrae Corn Fed Chicken Breasts (Bone In, Skin On) to roast in my wood fired oven.
The Holmbrae Corn Fed Chook is a absolutely stunning piece of produce here in Australia.
In the past I've brined whole chooks in a bath of 6% salt and some herbs and yielded fantastic results but never tried this with corn fed chicken.
So my question to the forum is ...
If I brine a top quality piece of corn fed chicken will it actually improve the final taste or could it have a negative impact?
