Brining a chicken?

I recall a discussion a while back about the deliciousness of Zuni chicken and the fact that it was brined.
I always prefer kosher chickens, and I was wondering if I could get the same flavor and moistness by brining a non-kosher chicken, that I get with a kosher chicken? And, by the way, how exactly would I brine it?
I guess I am wondering if it is the brining that makes a kosher chicken taste so much better,to me.
