                                Most mornings we have toasted sourdough bread or croissants, melon, fresh juice from the juicer (OJ, grapefruit combo with some frozen strawberries or blueberries tossed in) and French press coffee for my trophy wife, Nespresso espresso for me.
                                A couple of times a week I'll add eggs to the breakfast.
                                Add Armenian string cheese if we have any.

A lot of times I don't eat anything special for breakfast, just what is available on my street (usually lazy in the morning) - so it would be Papaya Salad, or a Thai Stir Fry, or Yam Wun Sen (Glass Noodle Seafood Salad). Although I do like the Thai style breakfast a sort of Fish congee - which I will add Nam Prik ... fish sauce and chilies.... It is not on my street.

                                                                                                                                                                                When I lived in Toronto - if I had breakfast it would usually be a BLT bagel (butter - not mayo), when in London UK I would sometimes eat bacon on a bun with brown sauce (I do like brown sauce), in Costa Rica .... I absolutely loved the simple dish of black beans and rice (never made it though).

Chop up white onion and red bell pepper (or green depending where in CR you are) and fry them in quite a bit of oil/lard. Add in cumin, coriander, stir til fragrant. Add in rice and black beans (with some of their liquid) and cook til all warm and incorporated. Serve with salsa lizano and hot chili sauce.

                                                                                                                                                                                      I'm not sure of the spices.... they most likely add some more. Also, salsa lizano might be added into the mixture as well.

Deep Fried Chicken with a spicy chili (Isan) sauce.... hesitated because I was disappointed and surprised.... they only had Chicken Breasts.... This one is a no-filling one, and I subbed just about half with Maseca, which is a finer, more processed masa harina. What they call "instant" masa, I think. I just happened to use milk + lemon juice because I had no buttermilk on hand, but if you do, I'm sure buttermilk would work just great! :)

                                                                                                                                                                                                    MASA EBELSKIVERS W. COCONUT MAPLE SYRUP

                                                                                                                                                                                                    For the ebelskivers...

                                                                                                                                                                                                    - 2 eggs, separated into whites and yolks
                                                                                                                                                                                                    - 1 cup All Purpose flour
                                                                                                                                                                                                    - 3/4 cups Maseca (or other instant corn masa mix)
                                                                                                                                                                                                    - 2 teaspoons baking powder
                                                                                                                                                                                                    - 1.5 Tablespoons sugar
                                                                                                                                                                                                    - 1/2 teaspoon kosher salt
                                                                                                                                                                                                    - 4 Tablespoons butter, melted
                                                                                                                                                                                                    - additional butter for frying
                                                                                                                                                                                                    - 1+2/3 Cups whole milk mixed with 1.5 Tablespoons fresh lemon juice (this curdle the milk a bit - not to worry)
                                                                                                                                                                                                    - 1/2 teaspoon vanilla extract

                                                                                                                                                                                                    For the Coconut Maple Syrup...

                                                                                                                                                                                                    - 1 Tablespoon unsalted butter
                                                                                                                                                                                                    - 1/8 teaspoon kosher salt
                                                                                                                                                                                                    - 1.5 Tablespoons packed brown sugar
                                                                                                                                                                                                    - 3 Tablespoons maple syrup
                                                                                                                                                                                                    - 1/4 Cup coconut cream (just the solids that rise to the top - not the milk, which is the solids and liquid mixed together)

                                                                                                                                                                                                    1) Into a large mixing bowl, sift the AP flour, masa, baking powder, salt, and sugar.

                                                                                                                                                                                                    2) In a separate clean and completely dry glass or metal mixing bowl, beat the egg whites with an electric mixer on medium until the whites hold a stiff peak and set aside.

                                                                                                                                                                                                    3) Melt the butter and add to the flour mixture, along with the milk/lemon juice, and using the electric mixer, mix all the wet and dry pancake ingredients except the egg whites together until smooth.

                                                                                                                                                                                                    4) Add the egg whites to the batter and gently fold them in until they're completely incorporated. Gently folding is really like stirring done slowly, one rotation at a time, with a sort of lifting motion at the end of each rotation that aerates the mixture and keeps it light and fluffy.

                                                                                                                                                                                                    5) Set the batter aside while you make the syrup. I find that ebelskiver batter, as do most pancake and crepe batters, benefits from a little resting period.

                                                                                                                                                                                                    6) In a small saucepan, combine all syrup ingredients and bring to very slow and gentle boil over medium heat. Once it reaches that boil, let it continue boiling at that heat for 30 seconds or so, stirring gently to incorporate all ingredients and to ensure that the salt has melted. And that's it! Cut the heat and set it aside to drizzle over your ebelskivers when they're done.

                                                                                                                                                                                                    7) Put a tiny dollop (about a centimeter cubed) into each ebelskiver pan well and place the pan over medium heat. When the butter starts to bubble, add enough batter to come almost completely up the side of the well - this is about 2 Tablespoons.

                                                                                                                                                                                                    8) When the sides start to bubble and brown, flip each ebelskiver with a couple of skewers or chopsticks or spoon ends or whatever you have that functions that way. And try to remember to flip them in the order in which you filled them! (It's like playing that takoyaki making video game - can't remember the name of it at the moment...)

                                                                                                                                                                                                    9) When both sides are cooked to a lovely golden brown and the ebelskiver just momentarily gives to a gentle press with your finger, they are ready to turn out of the pan, drizzle or dip with/in syrup, and enjoy! :)

Ended up buying two things, one which I often walked past but never ordered:

                                                                                                                                                                                                          First dish was likely called Khao Naa Mu (I made a similar dish but with duck), it is "Steamed Rice with Pork". What you see in the container is rice, pork which was boiled in a soup broth to cook, kale and pickled cabbage from the soup. The little dishes to the side have additional condiments to flavour the dish as well.

                                                                                                                                                                                                          The second dish is "Gaeng Juad Wun Sen Moo Sub" which is basically glass noodle soup with soft tofu and pork.

                                                                                                                                                                                                          I created my own all you can eat buffet....

                                                                                                                                                                                                            For The Man, this rustic 2-egg omelette, cooked in bacon fat, and filled with tomato, shallot, spinach and arugula sauteed with rendered bacon, served on a bed of raw spinach and arugula, and topped with fresh tomatoes lightly seasoned with salt and pepper and drizzled with our specially nutty finishing olive oil.

                                                                                                                                                                                                              Today I had a Spanish tortilla. No! Wait! It was a fritatata. ermmmm... No. It was a crustless quiche. Well, whatever it was, in an 8" skillet, I first sauteed some onions doused with kosher salt in a tsp of olive oil, when they were sweated, I added some chopped red bell pepper, some chopped zucchini, and some chopped tomatoes (wishing I had some eggplant too) and seasoned again, then covered the pan and let them condense slowly to a rich pulpy veggie bed. Then I spread a loose layer of grated cheddar and grated mozzarella. Poured in enough well shaken Egg Beaters to fill the pan about 3/4 full. Put the lid back on it, reduced the heat to a low simmer and let it do its thing for about 23 minutes when it was well set. Turned it out onto a plate, cut myself a big piece and toasted some Oroweat Oat Nut bread to go with it. It was really good! And I have half left for lunch or whenever. And now I need to add more tomatoes and some eggplant to my menu. I feel a ratatouille coming on! '-)

                                                                                                                                                                                                                                                          I have to admit, I have never, ever been a chili dog, or chili cheese dog lover because they are just too heavy for me. I like a good hot dog with mustard and relish, or sauerkraut and swiss, but the 'dragged through the garden' dog will always be my favorite.
                                                                                                                                                                                                                                                          I wonder if being a salad lover has anything to do with it?

                                                                                                                                                                                                                                                          Oh, and cacruden, you can't do a Chicago dog with a cheap hot dog! A Vienna or Hebrew National brand are all I've ever seen used. The flavor of those two brands is an important part of the dish. Just the thought of putting all those good veggies on a cheap hot dog just sounds icky. No thank you!

I actually prefer a thin crust "italian style" pizza - fairly simple. One of my favourites is made with Cabrese Salami, mushrooms, some cheese (pizza is not cut - because they don't do that at this place because it is not american pizza).

But oh, that chicken pie, that Walleye, the Prime Rib....nothing fancy, but the food has always been delicious, well-prepared and right to the point.

He wanted to see who was coming in so that he could get up and schmooze with them at the bar. The rest of the family would wait for him and wait for the food to be served and we could hear his voice, and his laugh, all the way at the table. He was never gone for long; he just loved people. Aw I miss him.

                                                                                                                                                                                                                                                                        Actually, I was referring to the legend of the origins of the Chicago style dog being a depression era food (which should be appropriate for now), where you could not afford "real meat" so you would get processed hot dog meat and then top it with whatever is available (except ketchup). Nowadays - hot dogs are no longer cheap and the quality of them is likely considerably less. I actually like Chicago style dogs, but then I like all the ingredients individually as well. I find the sport pepper to be a little light in heat though so I might replace it with something with a wee bit more kick or add in sriracha sauce which is available on some carts in Toronto :p.

                                                                                                                                                                                                                                                                      A small six ounce glass of vegetable juice, tall glass of water, cup of hot black tea, vitamin, one aspirin, fried red potato smoked salmon hash, and a home-made breakfast burrito.

                                                                                                                                                                                                                                                                      Salmon hash includes: one medium red potato cut in pieces steamed then browned in bacon grease. Add an equal part of smoked salmon with skin removed cut in chunks. Top with generous portion of flavored sour cream made with fine cut fresh chives more tasty by a few drops of Colgin brand liquid Mesquite smoke. I used Daisy-brand sour cream made only with cultured cream that tastes better compared to most others thickened with corn starch, etc.

                                                                                                                                                                                                                                                                      Breakfast burrito made of: two 2" round frozen sausage patties heated then cut up (I rotate various sausage, bacon, ham, ... ), one egg fried in bacon grease (yolk broke mixed into whites flipped sliced in strips), with grated sharp cheddar cheese this time, pinch of kosher less salty while big flakes, bit of fresh ground black pepper, and few spoons of home made salsa. Rolled in a Calidad-brand soft flour taco tortilla warmed by pre-heated cast iron until air expands making tortilla bubbles flexible soft not cooked until crispy (crepe texture this way I get a pack of 30 for $3 at Winco or Grocery Outlet).

                                                                                                                                                                                                                                                                      Salsa is: canned whole 28oz tomatoes pulsed in a blender with juice to desired chunkiness, chopped Bermuda red onion, habanero hot chili powder, smoky paprika, fresh lime juice, cumin, fresh cilantro because like, touch of vinegar, a little dash of sugar, enough fine cubes of serrano chilies knife-cut small for desired heat, season to taste. I add another layer of flavor with my own grind of 11 hot peppers some smoked dry. Let sit then taste. Add sweet if too hot. Add hot if too sweet. Often best after resting at least 24 hours to mingle. Is best with no added salt as a general rule as find the vegetables will stay fresher longer so seems to keep better without salt. While does not last long here. Taste and tune as mingles if needed. Great addition on all kinds of mexican food, egg dishes, salads, burgers, dogs, and even soups.

                                                                                                                                                                                                                                                                      Now making a favorite Mexican meat stew to use up remaining salsa. Slow cooked steamed all day until tender and tasty. For dinner tonight and fast meals this week. Started with several pounds of on sale beef roast trimmed then cut into bite-size pieces. Browned outside in a little bacon grease. Added fine chopped red onion, fresh garlic, local honey, salsa, and one small can chipotle peppers the adobo sauce. Is transforming into bubbly goodness now by a lid-on low simmer. If take lid off would reduce, concentrate, and thicken. If too thick can add a little water to thin. Good alone in a bowl. Very nice over long grain brown rice, noodles, with / on salad, or with potatoes. Thick so more concentrated makes most heavenly beef burritos. Also use other meats like boneless skinless chicken breast, ground beef, and pork loin or even mix meats. Will eat all desire today. Let cool to almost room temp then roll extra stew meat in tortillas then rolled in non-BPA Saran plastic wrap put in non-BPA Ziploc gallon freezer bags. When cook go big to make time later. Frozen burritos with beans or chili also taste great weeks later this way.

                                                                                                                                                                                                                                                                      About bacon if use. Never heat bacon fat above its 370 degree Fahrenheit. Is bacon fat's smoke point. Where it burns. Staying below that, I cook bacon in the oven set at 330 for 20-35 minutes depending on thickness combined with desired doneness. Drain mine on extra brown paper grocery bags. Can save bacon grease in a pint canning jar in fridge hand washed in hot water with soap between use. I like thick, drained, refrigerated and kept in the fridge to use for the next several days. If crave a BLT sandwich, wrap, or flat bread pizza. Maybe sprinkle a few tasty textured salty bits to top a salad, soup, potato dish, or something. Liquid smoke mentioned above is a great tasting simple to use substitute for bacon flavor in some soups, sauces, dips, and dressings.

I am not a good impulse shopper, so he gets better goodies than I do!

I told his wife I'd marry him for his eggs, that's how good they are.
                                                                                                                                                                                                                                                                                                                                                      Some things you just don't make at home when you know someone who does it perfectly. He did tell me that the tomato gravy is canned tomatoes added to his regular (homemade) sausage gravy. When he was telling me how to make it, I told him no, I only want to eat his, I don't want to make my own because it would never be as good.
                                                                                                                                                                                                                                                                                                                                                      One great thing about gardeners is that so many of them are also talented cooks.

Wanted to thank you for telling me how to bake a potato- rub all over with olive oil & then rub sea salt on & bake in oven. I had one cold one left over, sliced it very thin, browned it in a hot skillet with a little olive oil & then added soft scrambled eggs & chopped green onion for breakfast. Oh yes, I left the skin on, most delicious. Did not know baking this way would make such a difference in taste, but it sure does.

Another goodie is to make 4 large ones extra, and the next morning dice them into 1" cubes., put in large bowl, and toss with diced red onions, crumbled feta, halved cherry tomatoes, kalamata olives. Salt and pepper to taste, and dress with good olive oil and the vinegar of your choice. -- if you like oregano, toss in a T. or so of fresh minced.
                                                                                                                                                                                                                                                                                                                                                                        It's the skins left on that makes this salad, but do be really careful about adding, because the Feta is salty too.

I have never had luck with any of the boxed mixes, but the buzz word is "organic" & I think, "well maybe this time it will taste good." Hate to say it, but you saved me a few bucks, so sorry you were the guinea pig in this.

I'm also enjoying a nice, tasteful cigarette and waiting for some Tylenol to work. When it does work, I plan on eating some nice crispy corned beef hash, two poached eggs, and a buttered English muffin. I think it will be grapefruit juice this morning, or maybe pineapple-orange. And of course more coffee. There must always be more coffee, and more after that.

                                                                                                                                                                                                                                                                                                                                                                                              Being left with several cups of Jasmine rice from last night, and not being of a mind that allows me to comfortably waste even the most basic of foodstuffs (to do that I have to purposely shove it to the back of the fridge to grow....stuffff on it...), I sauteed two strips bacon with some garlic and onion and then scrambled it with two eggs and mixed it all into the rice that I'd given a brief turn in the skillet with a tot of sesame oil. Insta-fried rice. Not as vegetal-full as a planned recipe, but with my omnipresent Pepsi over crushed, a very very fine substitute.

It was really messing with me, and she could get in no matter what I used to wedge the door shut. I finally installed a fisheye lock - I'm being serious here -and now she lies outside the bedroom door in silent wait. As soon as I get up, she's winding around my ankles and purring and "escorting" me to the kitchen - and I feed her first to get her the hell off my freakin' back so I can get mine.

This lovely concoction is goin' down the hatch with half a bran muffin from a gargantuan batch of batter that I turned out and which reportedly will just hang out sulking in the fridge until I can get it fully used up. We'll see. I'm a little sick of these things already and may have to make a batch for neighbor gifts, and then they can be the ones who are sick of them. ; )

I wouldn't even say generational as I have friends whose parents (70s-80s) include it. I don't even think it's genetic as my sisters are morning tea drinkers, my parents were morning OJ/coffee people. I suspect it's a matter of non-morning people who need lots of caffeine and sugar to get started, but dislike the taste of coffee with sugar.

They must always be shredded) that came out nice and crunchy on the outside, creamy on the inside, and two poached eggs on top of the potatoes. Mixed blood oj and pineapple juice, and strong Cafe Bustelo with steamed milk - nothing better. Great start to a great day. At least, once I could move it was. : )

Since I'm not a big baker and angel food cake isn't a favorite either, I added three whole eggs and made a big mess 'o lightly scrambled eggs. We also had sausage patties. Someone forgot to get bread out of the freezer so we didn't even have toast. We did however have watermelon and strawberries. (Never again am I going to buy a watermelon in May. It just wasn't the same ripeness or 'watermeloniness' as an August or September watermelon).

There are several (but simple) steps in the prep; they are not simply chucked together.

(The correct term is indeed the one with two "y"s in it) I wonder if that dish was this one or another similar classic one, like "Babi Chin", which has aromatic spices in it (cloves, cinnamon, and particularly coriander) whereas "Babi Pongteh" does not.

Tilt the pan here and there to rearrange the uncooked parts, but don't scramble or stir it. Remove it from the heat after a bit and stick a lid on it to finish cooking it - I just put my tea kettle on top. A quick egg that tastes a bit different and can be rolled, filled, put in a breakfast sandwich, whatever. Part of my breakfast every day when I had to be out of the house early. Simple and good.

Freshly fried potato wedges on the side with housemade sauces: mayo, ketchup and peanut sauce. The peanut sauce was the only loser on the plate. Wedge portion was massive.

It's a grain (I know, seed) that I don't frequently use, and then almost always as part of a blend, for a side or main dish. But I've been wanting to incorporate some different ways with it, and the other day I found a recipe for Mahnomin, which is a Native American porridge, generally served for breakfast. I cooked a mixture of the wild rice with some short-grain I had on hand, adding the short-grain after the wild had cooked for about 25 minutes.cooking it down with orange juice, and added dried cranberries, toasted hazelnuts, prunes and snipped dried apricots at the last, wth a little brown sugar and a splash of heavy cream. I liked it; it really worked as a breakfast cereal. Next time, I'll try cooking it with coconut milk, and add some cinnamon and nutmeg, and brown sugar and dried figs or dates. So anyhoo, to make long story longer, the Mahnomin and two pieces of oatmeal bread, toasted, with apple buttter, a side of bacon and a LOT of coffee. Ah, sustenance!!

If not, let simmer until tender. Divide rice between bowls and top with cream and rest of fruit toppings and sweetener of choice.

My maternal grandfather (100% Swede) used to gather wild rice in a canoe, parch it (roasting in a big cast iron kettle over a wood fire), winnow it (separating the chaff from the grain) and that was a substantial part of my mother's family's food for the year during the Depression.

                                                                                                                                                                                                                                                                                                                                                                                                                                                                                                                                  A few years ago I started to make a hot breakfast cereal out of whole grains such as oats, barley, rye, red wheat, spelt, and buckwheat. I would put all those whole grains into a crockpot on high for a couple hours with water and salt and later I would add already cooked wild rice, dried cranberries, raisins and toasted walnuts or hazelnuts. If I added the wild rice uncooked the result was a bit 'muddy' so I added it already cooked.

I bought a bunch of hoagie rolls from a bakery outlet for $.10 each so I toasted them, with a venison sausage patty, fried egg and slice of cheddar cheese. I made a bunch of them in advance and kept them warm in the oven so it was just like McDonald's ; )

Within the last two years both Minneapolis and St. Paul changed their city ordinances to allow food trucks and I suppose some of them might have tacos but I don't think they exclusively sell Mexican food. I know one of them features a decent lobster roll. I bet a statement like that would make a New Englander get a little uppity.

How do you make wavy juevos? Well, you fry them in a wavy bottomed grill pan, of course! But I'm just funnin' ya on that part. After the tortillas were softened and crisped just a little around the edges, I topped them with a bright eyed pair of sunny side up juevos. Then I cranked up the skillet to hot and poured in a generous cupful of store bought salsa. In this case, Jerdez' Salsa Casera. Added a bit of cumin and garlic powder to round out the flavor and reduced it all to a pulpy, tomatoey mass that was spread over the bright orange sunshiny eyes of my eggs until only a tiny bit of the whites were still visible. A dollop or two of Crema Mexican followed by a shower of Cotijo and a sprinkle of chopped chives. Garnish the plate with a fork and serve with my standard steaming mug of fresh espresso. ¡Desayuno para los dioses!

Then, at 7:30, Breakfast was Roman Meal cream of rye, made with half water and half almond milk (unsweetened). Just recently discovered this hot cereal and LOVE it. It's perfect to make a savory breakfast cereal from. Sweet doesn't really go too well with it...Today I made it with an organic egg, beaten and added to the 'meal' a little before it finished cooking, <1tsp flaxseed meal, sprinkle of shaved parmesan, crumbled some dried nori (seaweed) in there, salt, cracked black pepper, all mixed together, and topped off with a light spreading of Kerrygold garlic and herb butter (the herbs in this butter I believe are chives, parsley and dill and paprika as well). Best word I can use to describe this breakfast (besides delicious) is DEEP. TRY IT. Dessert was a handful of really good blueberries and a slice of really good cantaloupe.

Should have taken them out of the simmering water at three minutes instead of four because they ended up a bit overdone to my liking. But with a lovely dipping sauce made with 1/4 cup of organic ketchup and 1/2 cup of prepared horseradish with the juice of half a lemon, I managed to devour them all. Toast and fresh strawberries to keep them company. Hey, a pink breakfast! And of course, a mug of espresso! All enjoyed to the joyful noise of Ben Webster, Oscar Peterson, Ray Brown, and guys like that... Life is good! Convention sucks! '-)

                                                                                                                                                                                                                                                                                                                                                                                                                                                                                                                                                                                              Yesterday I made a delicious scramble: sauteed diced onion and diced kielbasa, then folded in a bunch of fresh baby spinach until just wilted, seasoned with garlic powder and pepper, then added several eggs whisked with s&p and a scoop of cottage cheese and cooked until set. It was great.

I had my usual pedestrian breakfast: fried egg, cheese and bacon wrap. And of course, Pepsi, coffee and ice water. Then off to the Farmer's Market where I got the most amazing pan au chocolat from a local French bakery--flaky, buttery pastry with a rich dark chocolate inside. And more coffee.

                                                                                                                                                                                                                                                                                                                                                                                                                                                                                                                                                                                                I also picked up a baguette at this same stand and a local farmer's garlic and chive cheese and salted butter. (These items will appear in the lunch thread.) I picked up some fruit as well, but they did not figure into today's meals.

                                                                                                                                                                                                                                                                                                                                                                                                                                                                                                                                                                                                  I was able to get a duck at a local market this week, and what was left was turned into duck hash, w/ diced red potatoes and white onion, fried until crunchy in duck fat. Topped that off with poached eggs, and washed it all down w/ the proverbial Pepsi cola, which did indeed hit the spot. :)

Even an iPhone only keeps you busy for so long, especially when you're on 4 1/2 hours sleep and no coffee. I went in just to get coffee- which was AWFUL- but ended up also getting an order of cinnamon melts which were just downright evil. Sweet in the morning is not my norm, but oh.my.god. Never had them before- I ate every bite.

                                                                                                                                                                                                                                                                                                                                                                                                                                                                                                                                                                                                      Then at 9:30, met friends at the diner for 2 eggs over easy on top of 1 slice of buttered white toast, 2 slices of very crispy bacon (I think it was deep fried), well done home fries and OJ. Stopped at Dunkin Donuts on the way home for a large french vanilla with a caramel flavor shot with cream and sugar for me and large regular for DH.

Hit it with a little sherry vinegar and a little red pepper flakes as well as salt and pepper then diced a tomato and added it near the end until it softened a bit.
