Breakfast, south/east nassau, south/west suffolk

I'm looking for an interesting place for breakfast on the South Shore of Long Island, +/- a 15 minute drive of the Nassau/Suffolk border.

I've heard of places like Thomas's Ham and Eggery in Carle Place and Maureen's Kitchen in Smithtown, but I'm not going to drive up to 45+ minutes for breakfast.

But, I'd like to find places that serve "interesting" things like Maureen's orange and blueberry pancakes, or their mushroom, jalapeno, and pepper jack cheese omelet. To me, a doughnut (or even a bagel and butter) is not a breakfast. I'm not a pork eater, so bacon/sausage doesn't interest me (except maybe turkey versions).

IOW, if I'm going to go out for breakfast, it has to be for something that isn't easily made at home.
