Breakfast question

Over the weekend I had breakfast at the hotel near LAX where my friend was staying.

He ordered his eggs hard boiled. The waiter said they don't serve eggs hard boiled. Now I'm not a cook by any means but making hard boiled eggs can't be that difficult could it? I mean put eggs into a pan, fill it with water and let it boil.

My question is do most restaurants serve hard boiled eggs? If so why not?
