I have an idea for a breakfast dish, but I don't know a method to make it happen. I want to saute a small amount of vegies (mushrooms, onions, bell pepper) in a small skillet until not quite done. Then put an English muffin in the toaster. Then add a well-beaten egg to the vegies and stir the whole thing around, forming it into something like an egg and vegie patty, to go inside the English muffin. That's the hard part. I can achieve scrambled eggs with sauteed vegies, but I want to find a way to create a coherent patty, something like a slice of quiche.
I've tried bunching the vegies together and gradually piling cooked egg on top, but it's tedious and the whole thing falls apart if I try to flip it.
Can anyone suggest a method? Thanks.
