I have a few questions about making bread or pizza dough in a Kitchenaid Mixer and a Cuisinart food processor. Any advice is appreciated - thanks in advance.
1. I have a dough hook for the mixer, but is it better to use another hook first, and then use the dough hook once the ingredients come together? Or just use the dough hook the whole time?
2. Does kneeding the dough in mixure take longer than kneeding it by hand? That is, if a recipe says to kneed the dough for 10 minutes by hand, how long should I kneed it in the mixer?
3. The only two blades that I have for the Cuisinart are the metal chopper and a plastic chopper. I don't have any special bread blade. Can I use the metal chopper to make bread (and then kneed it by hand)? Or is this a bad idea?
