Why do so few restaurants serve decent bread? Most of the restaurants we go to serve the most ordinary spongy, white loaves with no taste or texture. I can get better bread at my local (and not at all fancy) grocery store. I am not surprised to find this to be the case at the chains (it ALWAYS cracks me up when people talk about how great the bread is at Olive Garden and Outback perhaps I have partially answered my own question here), but we have found this to be the case at even otherwise very, very good restaurants from the family owned family friendly pasta joints to some really upscale places. In fact, it is getting to the point that it is unusual to find a good bread basket. We live in Richmond, VA, but we travel a lot and have found this to be the case everywhere we go.
I know that a lot of restaurant people read/post here and I was hoping that some of you might know the reason.
(An odd side note to this: many, many Greek restaurants have very good rolls with an unusual flavor wish I knew what it was!)
