I made some dough that turned out a little too wet to rise well, and just sort of spread out. I covered the dough and left it in the oven during the preheat, thinking it might be helpful if it was solidifying as it tried to rise, similar to Lahey/Bittman or Artisan Bread in 5. It rose beautifully! When the oven beeped, the loaf was just starting to hit the top of the pan that was inverted over it. I removed the lid and splashed some water in the bottom of the oven, hoping I could still get a decent crust. I'm waiting anxiously to see how it comes out.
Has anyone tried letting the bread rise in the preheat when you're in a hurry? I'm curious whether it would have worked if the dough hadn't been resting at normal temperature for half an hour first. I really like the ABin5 dough, because it's sour after a few days, but when I haven't planned ahead, I'm excited by the prospect of being able to get bread on the table that fast.
