I asked before about the "simplest" bread available, and that lead to research and discovery that almost all commercially available wheat flour has some barley added to it (helps bread rise).
I don't like the sour note that malted barley flour adds and wonder if there's any type of bread (or cake?) that doesn't contain it.
(Note that if there's an ingredient "wheat flour"--that likely has a certain percentage of barley. Even Kossar's Bialy's, which I thought were the simplest type of bread possible, has some barley).
Any tips appreciated,
