Bread Baking Results (take 3 - Rosemary)

Who says man cannot live by bread alone?
Although the cinnamon raisin was my favorite, the rosemary loaf was the husband's top pick of the week. After the initial rise, I was supposed to form the dough into 2 five inch rounds. Which I did and allowed for a second rise, but I expected a rounder (higher) result. The resident breadmaker at the office said I probably could have worked in some more flour for a stiffer dough which would have sat up higher. Any other thoughts? Is there such thing as a "bread collar" akin to the type you might use to make a souffle? Focaccia is next. Unless someone can give me a good pissalediere recipe......
