I am new to bread baking, and have a question about kneading. I use a bread machine for the first kneading and rising. Then I refrigerate the dough. By the next morning the bread has risen again. I punch it down, do the 2nd kneading manually, let the bread rise a 3rd time, and then bake the bread.
To save some time in the morning, I would like to do the 2nd kneading BEFORE refrigerating the dough. This way, all I have to do the next morning is bring the dough to room temperature before baking it. I would not have to knead in the morning and then wait for the bread to rise a 3rd time.
Can any of you tell me if this plan would cause problems for the bread? Does dough always have to be punched down (and risen again) after refrigeration?
